I've been taking advantage of the cooler days lately. We, like many others, shut off the AC, opened all the windows and let the breezes fill the house. This week it was so cool in the house in the morning that I decided to make some Eggplant Parmesan. YUMMY!
This was, of course, the before pic and I didn't take an after so you'll have to trust me when I say it was delicious. The Pres' Mom would have been proud of her DIL. She would have loved it! I got three layers loaded with sauce my cheese mixture of parmesan and mozzarella.
