Craving Chocolate?

It was much cooler than normal when I arrived home so I decided to do a little baking. Two more loaves of zucchini bread and a batch of zucchini brownies with frosting. Darn they are good! I would highly recommend them if you are craving chocolate.

The recipe was found on All Recipes and is so simple.

Zucchini Brownies

1/2 c vegetable oil
1 1/2 c sugar
2 tsp vanilla

Mix oil sugar and vanilla together in a large bowl.

Combine flour, cocoa, baking soda and salt
2 cups flour
1/2 c unsweetened cocoa powder
1 1/2 tsp baking soda
1 tsp salt
Stir into sugar mixture.
Fold in 
2 c shredded zucchini
1/2 c chopped walnuts
Spread evenly in 9x13 greased and floured pan.
Bake for 25-30 min in preheated oven.

To make frosting:
melt together 6 cocoa powder and
1/4 c margarine or butter...set aside to cool
In a medium bowl blend together
2 c confectioner's sugar
1/4 c milk
1/2 tsp vanilla
Then stir in cocoa mixture.
Spread over cooled brownies before cutting.


At first when I began mixing them, I thought, what about the eggs?
Nope...not to worry. These moist, fudgy brownies taste yummy and the frosting is an added chocolate quencher!

Oh they look yummy.

I make Banana bread so as it get's cooler. I will plan to do so.

When you bake yours. What rack do you use.

And do you use on bottom dust with flour or some marg so they don't go too brown? Mine go too brown.

I saved a recipe a long time ago for zucchini brownies and I never did try it out. I have some zucchini left I just may have to make some

All you people with cooler temps are making me JEALOUS! I'd feel better if you'd bake some of those brownies closer to me. LOL

I've never heard of zucchini brownies...nor have I ever spelled zucchini correctly until tonight so I will take that as good karma and try out your recipe.
