Good-Bye Mr Chips

With all the ingredients I needed for cookies, somehow we miscalculated on Semi Sweet Chocolate Chips.  What in the world am I going to do with all of them? I thought.  The kids certainly don't need any more cookies or bars.

"Ah ha," said I.  "It is January and that means that our oldest grand daughter will have a birthday this month.  A birthday means cake and cake means baking, right?"

Well, sort of.   I decided to surprise Rhia (aka Jelly Bean) with a few cupcakes for her party.  Besides what's a girl to do when she's stuck home with a sore back?  You can't lay around all day.  Moving helps your body heal.  Did you know that?


Putting all my baking supplies and pans in the old jelly cupboard that was my MILs makes it so much easier when I want to bake.  Melting chocolate chips for drizzle as well as placing them in the chocolate cupcake batter made one bag vanish...YEAH!!!

Hmmmm.
and the remainder of the chocolate chips?
Josh is February.
Kree is March.
Tess is April.

what do I make with my chocolate chips? I thought you were just supposed to eat them straight out of the bag :)

Such a terrible "problem" JP having TOO many chocolate chips...input thrm in muffins and oatmeal too. And, just to let you know that in case you still have too many after all those celebrations, my birthday is early Feb.

Take a plain white wrap and spread with honey. Sprinkle choc chips, crushed nuts and coconut, whatever you've got that would work..butterscotch chips are good too. Roll the wrap tightly and sprinkle with confectioners sugar. Cut into one inch lengths. My daughter and I invented this one day when we were desperate for a sweet treat.

i have never used a chocolate chip... i don't bake, but i do EAT and when mother used to bake cookies i was always in her choc chips just eating them...

Those look so yummy JP! I wouldn't have thought to put them in my cupcakes or to drizzle them over them. I have added them to brownies before. Your cupcakes were beautiful! Happy Birthday to your grand daughter!

I have a bag in a half and I'm trying to figure something out. I don't like having baked goods around because they are too tempting but I can't think of anything special to bake for.
