Cool Weather = Baking

I've been taking advantage of the cooler days lately.  We, like many others, shut off the AC, opened all the windows and let the breezes fill the house.  This week it was so cool in the house in the morning that I decided to make some Eggplant Parmesan.  YUMMY!


This was, of course, the before pic and I didn't take an after so you'll have to trust me when I say it was delicious.  The Pres' Mom would have been proud of her DIL.  She would have loved it!  I got three layers loaded with sauce my cheese mixture of parmesan and mozzarella.

It's been cooler here as well. The other night I made chil and tea biscuits, one of our favourite cold weather dishes.

Grenville made this a couple of weeks ago and we have more eggplant coming in, so there's a repeat in our future too. Yours looked wonderful, JP...perfect with some crusty bread and a salad.

Yum! I did soup in the crockpot today since the weather was so much cooler. Love it!
