P is for...


PINCHOS

One night the Pres and I were invited to cookout on the beach with my daughter, Jennifer, and Angel.  My daughter is truly amazing!!  Climbing in the back seat of the car, the Pres told me that the cooler was in the trunk along with the grill and that they thought of everything!

We drove to a secluded part of the island...away from the resorts...and parked.  While Angel lit the portable grill, Jennifer began to unpack the cooler.  We were having chicken pinchos seasoned cajun style, baked potatoes topped with butter and sour cream (squeezed from a corner cut in a zip-lock bag) and green beans.

It was delicious.
Oh, one more thing.
The last time we cooked out it was terribly windy and the Pres' plate blew away!!  This time we brought glass plates that belong in our resort.  Shhhhhhh...don't tell anyone.

Your picnic on the beach in a tropical locale sounded wonderful, JP...and that menu looked delicious from the photo and description and mums the word on borrowing the glass plates.
